Food-Grade Silicone Oil: An Inert Functional Medium in Processing

In scenarios such as baking release, dairy defoaming, or anti-stick food packaging, specific grades of polydimethylsiloxane (i.e., food-grade silicone oil) are permitted for use as processing aids. Their core value lies not in participating in food composition, but in providing physical functional support during production processes, and they must meet strict requirements for biological inertness and migration limits.

Such silicone oils must be certified by regulations such as FDA 21 CFR 178.3570 or EU EC No 1935/2004, ensuring their molecular structure is highly saturated, free of active functional groups, and deeply purified to remove catalyst residues and low-molecular-weight cyclic compounds. Under these conditions, they can contact food within specified usage limits, are not metabolized or absorbed by the human body, and do not chemically react with food ingredients.

Their functionality relies on inherent physical properties. After forming an ultra-thin coating on baking mold surfaces, silicone oil,凭借其 (by virtue of) extremely low surface energy (approx. 20 mN/m) and high hydrophobicity, blocks the van der Waals force adsorption between dough or chocolate melt and metal/silicone substrates, allowing finished products to detach easily without damaging their shape. In fermentation tanks or dairy homogenization processes, trace amounts of silicone oil act as defoaming components, inhibiting excessive foam accumulation by destroying the elasticity of the gas-liquid interface film, thereby ensuring process stability and equipment volume utilization.

It is worth noting that the action of food-grade silicone oil is instantaneous and localized. It does not impart any new attributes to food, only briefly exists at the processing interface, and is subsequently either washed away or fixed in trace residues with the packaging material. This characteristic of "process assistance, terminal imperceptibility" makes it an invisible tool in modern food engineering that balances efficiency, safety, and compliance—a pure functional medium that serves only manufacturing logic without intervening in consumer experience.
